Cajun Blackened Salmon

YOU WILL NEED

4 tbsp Olive oil

4 Salmon Fillets.

100g Cajun Black Magic

400g Can Corn Kernels, drained and rinsed

2 Large Tomatoes, diced

2 Chorizo Sausage, sliced into discs

1 Red Onion, Finely Diced

1 Lime, Juiced

Parsley

 

TO MAKE

  1. Clean you salmon, trim of any unwanted skin of fat. Remove pin bones if there are any and pat dry.
  2. Rub with a little oil and sprinkle over liberally with Cajun Black Magic Seasoning. 
  3. Heat 2 tbsp of oil in a pan over a medium high heat, add chorizo and fry for 1 minute, add corn and fry for a further 1 minute tossing or stirring constantly..
  4. add the onion mix well and remove from heat, place into a suitable sized bowl and allow to cool.
  5. Add remaining oil to pan and fry salmon over a medium heat until desired doneness is reached.
  6. Add tomatoes, lime juice & parsley to chorizo corn mixture and mix well season to taste.
  7. Serve salmon ontop of Salsa and spoon over any juice from the salsa.
