Golden Cauliflower Parmagiana

Total Time: 45 min Difficulty: Easy  Serves: 4

YOU WILL NEED

  • 1 Large Cauliflower
  • 60g Mumbai Nights
  • 500g Fine Breadcrumbs
  • 1/8 Cup Grated Parmesan
  • 1 egg
  • 1 Cup Milk
  • 1 Cup Plain Flour
  • Oil for Frying
  • 300g Pasta sauce
  • 20g Butter
20g Plain Flour
  • 1 cup milk
  • 1/8 Cup Grated Parmesan
  • 1/4 Cup grated tasty cheese
  • Parsley to garnish

 

TO MAKE

  1. Preheat oven to 180c
  2. Cut the Cauliflower into 6cm thick slabs being careful not to break off to much of the cauliflower.
  3. Whisk the egg and milk together in a medium bowl.
  4. Combine the Mumbai Nights, breadcrumbs and parmesan in another medium bowl and mix well.
  5. In a third medium bowl add the flour and a little salt and mix well.
  6. Heat up the vegetable oil in a large high sided pan or deep fryer or if using an air fryer select the appropriate setting for baking.
  7. Place the cauliflower into the flour and move around gently to coat evenly with flour, then place into the egg wash mix moving around gently to ensure it is well coated, then transfer to the crumb mixture and do the same, placing on to a tray until needed. repeat the process for all remaining cauliflower.
  8. Shallow fry, Deep Fry or Air Fry your cauliflower until golden and just cooked through.

  9. allow to drain (oil fry) and then transfer to a lined baking tray and top with a generous amount of pasta sauce.

  10. Meanwhile heat butter in a medium sauce pan and melt over a medium heat, add flour and mix to combine, a biscuity texture should be achieved without burning, slowly add milk and whisk in to remove an lumps continuing the process until a smooth sauce is achieved. (add more milk or stock if its too thick at this stage.
  11. Season to taste and add cheeses whisk in.
  12. Pour cheese gently over cauliflowers and (you can top with more cheese at this point if you like!) then bake in the oven for 8 minutes.
  13. Serve with your favourite Sides.
