Sri Lankan Dark Curry is a Meat curry mix packed with complex flavours and it has an earthy robust, spicy and deeply aromatic essence.
Thunapaha or Thuna Paha is the generic term used in Sri Lanka for the curry powders (spice mixes) used in everyday cooking. As with many local dishes, there is no standard recipe or a set formula for making curry powders, so hence there are many variations from un roasted to dark roasted as with our blend. However, in general, there are mainly three types of curry powders that are widely used in Sri Lanka, namely basic curry powder (Thunapaha), roasted curry powder (Badapu Thunapaha), and unroasted curry powder (Amu Thunapaha) our being Dark Roasted and mild in heat and earthy, creating an ultra-rich flavour from the spice mix.
Badapu Thunapaha or Roasted Curry Powder is mostly used for making spicy meat, and fish, egg curries. Sometimes it is also used for making spicy vegetable curries.
