Whole cloves are one of the most powerful spices in existence — a single clove can perfume an entire pot. Their flavour is deep, sweet, and almost medicinal, with a warmth that lingers long after the dish is done. Use them whole to infuse stocks and braises, or grind them sparingly into spice blends where they add a complexity that’s hard to identify but impossible to replicate.
Use in mulled wine, biryani, spice blends, braises, and baking. Handle with care — a little goes a very long way.
