Thai Prawn Curry

Total Time: 1 hrs Difficulty: Easy  Makes: 4 Serves

YOU WILL NEED

2 tbsp Olive oil

400g Raw Frozen Prawns.

4 tbsp Thai Fisherman's Blend

1 Medium Onion, chopped

1 tsp fresh ginger root, finely sliced

1 400g Coconut Cream

200ml Fish Stock, or Chicken or Vegetable if you cant find fish

1 Cup Long grain Rice

Sliced spring onions for garnish

1 small bunch Coriander, chopped

 

TO MAKE

  1. 1.Heat 2 tablespoons of the olive oil in a large nonstick pan. add the onion & ginger and fry for a few minutes until soft.
  2. add the Thai fisherman's blend and fry for 1 minute.
  3. add the stock & half of the coconut cream and bring to a boil and reduce until slightly thickened.
  4. add prawns and remaining coconut cream and cook for 1 minute or until prawns are cooked.
  5. meanwhile cook rice as per cooking direction from packet.
  6. divide rive between 4 bowls and spoon over curry, garnish with spring onions and coriander.
